The main things I focus on are using the correct lube for cold conditions, keeping moisture out of the action and being aware that gloves might hinder your hand movements. And remember to check the bore before firing, just in case any snow has found its way inside.
 
The biggest winter habit I remind people is condensation. When a cold gun comes inside, moisture shows up. I wipe stuff down when they warm up to prevent rust.
 
I always check zero on my rifles. With pistols, it's more real-world. I check where the dot hits during drills rather than treating it like a benchrest thing.
